Bi Lo Tailgating Cookbook

Rules: All recipes must be dated and include an email so we can contact the contestant. Please insert them below on this page. Each week, the recipes will be posted and one recipe will be chosen as a special winner of a $25 gift certificate to Bi-Lo. Winner will be chosen randomly based on total entries. No purchase is necessary to win.

At the end of the season all recipes will be posted in an electronic cookbook that can be accessed and downloaded by other Paladin fans at no cost. Recipes posted on this website will be in the public domain and contestants forfeit all rights to the recipes. Winners will be chosen each week and contacted by email.


Leslie Nunnery, Greenville, SC: 24 Hour Salad 1 bag of mini marshamllows 1 can of pineapple chunks (drained with juice reserved) red grapes pecans 4 egg yolks 4 TBS sugar (more or less to taste) 4 TBS reserved pineapple juice 1 tsp vinegar 1 pint of whipping cream Mix the marshmallows, pineapple chunks, halved red grapes, and pecans together and set aside. In a medium saucepan, mix the egg yolks, sugar, pineapple juice, and vinegar together and bring to a boil. Cook until it congeals. Pour over the marshmallow mixture, cover and cool. Finally, whip the whipping cream until it forms a peak. Pour over entire mixture. Cover and refrigerate overnight. Date: Thursday, October 4, 2007

Nicki Grumbles , Greenville, SC: Buffalo Chicken Dip 1 ½ lb. of cooked chicken diced ¾ cup diced onion 1 ½ cups diced celery 2 oz. cream cheese 1 cup of Blue Cheese dressing 1 cup shredded sharp cheddar cheese 12 oz. bottle of Red Hot Sauce Sauté onion & celery until glossy & softened. Add cream cheese, blue cheese & hot sauce, stir until melted. Remove from heat. Add chicken & mix well – add cheddar cheese & mix. Pour into baking dish and bake 30 minutes at 350. Shari Moffitt, Greenville: Piggy Cheese Dip-1 lb. Bacon, 1 lb. Sausage, 2 lbs. Velveeta Cheese,Tabasco sauce to taste, A few sprinkles of steak seasoning, 2 bags of tortilla chips. Cook bacon and set aside. Then cook sausage and add a sprinkle of the seasoning and a few drops of the Tabasco sauce. Cut the cheese into little cubes and put it all into a Crock-pot. Stir about every 7-10 minutes. After it is all melted add a little more steak seasoning and Tabasco sauce and stir it all in.

Kristin Stultz, Greenville, SC: Refried Bean Dip 1 can of refried beans 1 package of cream cheese 1 jar of salsa (x-hot if you are brave) 1 package of shredded cheddar cheese In a microwave-able bowl mix beans, cream cheese and half of the jar of salsa. When well mixed, spread evenly and smooth, then pour the rest of the salsa to cover mixture evenly, cover with a generous layer of cheddar cheese and microwave for 2-3 minutes (until cheese is melted) Serve with tortilla chips, potato chips or spread over hot dogs, hamburgers or anything else!!!
